Viral Rice Paper Bacon, Egg, & Cheese

Ingredients
3 eggs
3 rice paper wrappers
1 strip bacon, cooked
2 tbsp shredded cheese (or more to taste)
Everything bagel seasoning
Instructions
Preheat oven to 400F.
Cook the bacon until crispy and set aside.
Scramble the eggs in a pan until just cooked/slightly undercooked. (They will cook more in the oven.)
Dip each rice paper sheet briefly in an egg wash until slightly softened and layer/slightly overlap the 3 softened rice paper sheets to create a longer paper.
Place the scrambled eggs, bacon, and shredded cheese in the center.
Fold the rice paper edges inward and roll tightly into a wrap.
Sprinkle everything bagel seasoning on top if desired.
Bake at 400F for 12-15 mins until golden brown.
