Viral Rice Paper Bacon, Egg, & Cheese

Ingredients

  • 3 eggs

  • 3 rice paper wrappers

  • 1 strip bacon, cooked

  • 2 tbsp shredded cheese (or more to taste)

  • Everything bagel seasoning

Instructions

  1. Preheat oven to 400F.

  2. Cook the bacon until crispy and set aside.

  3. Scramble the eggs in a pan until just cooked/slightly undercooked. (They will cook more in the oven.)

  4. Dip each rice paper sheet briefly in an egg wash until slightly softened and layer/slightly overlap the 3 softened rice paper sheets to create a longer paper.

  5. Place the scrambled eggs, bacon, and shredded cheese in the center.

  6. Fold the rice paper edges inward and roll tightly into a wrap.

  7. Sprinkle everything bagel seasoning on top if desired.

  8. Bake at 400F for 12-15 mins until golden brown.
