Microwave Protein Pancakes

Servings: 4 pancakes
Serving size: ~2/3 cup batter
Ingredients
1 cup oats (100 g)
1 cup low-fat cottage cheese (230 g)
1 cup liquid egg whites (240 g)
1 tsp vanilla extract
1 tsp baking powder
¼ tsp salt
½ tsp cinnamon
Spray oil
Instructions
Add oats, cottage cheese, egg whites, vanilla, baking powder, salt, and cinnamon to a blender.
Blend until smooth and fully combined.
Lightly spray a small microwave-safe bowl with oil.
Pour about 2/3 cup batter into the bowl.
Microwave on high for 2–3 minutes, or until a toothpick inserted in the center comes out clean.
Let cool slightly and enjoy!
Optional toppings: berries, nut butter, Greek yogurt, chicken sausage, or whipped cream.
