Microwave Protein Pancakes

Servings: 4 pancakes

Serving size: ~2/3 cup batter

Ingredients

  • 1 cup oats (100 g)

  • 1 cup low-fat cottage cheese (230 g)

  • 1 cup liquid egg whites (240 g)

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ tsp cinnamon

  • Spray oil

Instructions

  1. Add oats, cottage cheese, egg whites, vanilla, baking powder, salt, and cinnamon to a blender.

  2. Blend until smooth and fully combined.

  3. Lightly spray a small microwave-safe bowl with oil.

  4. Pour about 2/3 cup batter into the bowl.

  5. Microwave on high for 2–3 minutes, or until a toothpick inserted in the center comes out clean.

  6. Let cool slightly and enjoy!

  7. Optional toppings: berries, nut butter, Greek yogurt, chicken sausage, or whipped cream.
