Bone Broth Eggs

Ingredients

3 large eggs

2 cups bone broth

1 tsp butter

Optional toppings including fresh ginger, scallions, soy sauce, and salt and pepper to taste

Directions

  1. Crack the eggs into a blender.

  2. Add the bone broth.

  3. Blend for about 5 seconds. Do not over-blend.

  4. Heat a pan over low heat and add the butter.

  5. Once the butter is melted, pour in the egg broth mixture.

  6. Let it sit briefly as the eggs begin to set and then move the eggs around, like soft scrambled eggs.

  7. Continue gently pushing and folding until cooked to your desired consistency.

  8. Add any desired toppings.
